How to identify a "tourist trap"?
Before we give you specific names, a good host must teach you to distinguish the wheat from the chaff. Run away if:
There are photos of the dishes on the door: A good rice restaurant doesn't need to show you what a paella looks like on a plastic sign.
They offer you paella at any hour: Rice in Valencia is eaten at midday. If a place offers you paella for dinner at 10 PM, be suspicious.
The color is neon yellow: Artificial coloring is the enemy. Authentic paella has ochre and saffron tones.

1. Casa Carmela (Malvarrosa)
An undeniable classic. If you want to taste the flavor of orange wood, this is your place. It’s near the beach, yes, but its tradition since 1922 speaks for itself. It’s essential to book weeks in advance.
Monlar Tip: Always ask for the "socarrat" (the toasted rice layer at the bottom). It's the crown jewel.
2. Restaurante Levante (Campanar)
If you're staying at our Monlar Campanar apartments, you're in luck. You don't need to go to the city center to eat one of the best Valencian paellas in town. It's a place frequented by locals, with excellent ingredients and old-fashioned service.
Must-try: Their traditional Valencian paella (chicken, rabbit, and green beans).
3. Alquería del Pou (Near the City of Arts and Sciences)
A few minutes from Palau Apartments, this renovated old farmhouse offers a magical setting surrounded by orchards. It’s the ideal place to understand that rice is culture and landscape.
Recommendation: The "arroz a banda" or "arroz negro" (black rice) are spectacular.
4. Lavoe Arroz y Mar (Center/Ruzafa)
For those who prefer a more contemporary touch without losing the essence. Very close to Monlar Ruzafa, Toni Boix treats the rice like few others in the city. It’s an elegant establishment where seafood is the star.
The detail: Their rice dishes are delicate, with loose grains full of flavor.
